Pie of the week: Strawberry Mascarpone

This is one of Babe Anna’s favorites, and combines fresh mascarpone cheese with macerated strawberries, lemon, sugar, eggs and cream. We’ve been experimenting lately with the glaze on top – previously we used an apricot jam as the base, but we’ve had a hard time finding an organic apricot jam that’s up to snuff, so we recently switched to a honey base. My favorite part is getting to arrange the sliced strawberries in a pretty pattern on top. Don’t forget, you can reserve on here for the weekend, or just come by the LSC to try a slice!
